Afternoon all - been pretty chilly down these parts lately, with 2
weeks of straight frosts. Crunchy grass underfoot in the morning, and
neutered brass monkey's running around. We have just completed late
pruning to try to prevent any frost damage on the shoots.
Sorry for the delay on this email - have some new software, as you may
note, which means my emails aren't as big as the once were.


Team
Coonawarra - Had a heap of friends come down to visit us recently,
with us all hiring a bus and roaming around all the cellar doors all
day, topped off with fantastic lunch at Hollick. The wine must have
been good, as there were some very full boots (car boots that is) on
the way home. And wobbly boots on that night (Shoes that is).





Masquerade Ball, Melbourne - A great night thanks to James
Fergusson, held at the Money Order. A great night, and a good warm up
for Derby Day, Melbourne.

Cabernet Celebrations and Barrel Series 10 Auction
In October 2006 the
Coonawarra Vignerons will celebrate the 10th Coonawarra Cabernet
Celebrations. With over 30 events in 3 days, the region is abuzz with
live music, Master Classes, special dinners, vineyard tours and
culminates in an Auction of the finest barrels of Cabernet Sauvignon
from the previous years vintage.

Byzantium Lamb
Slow-cooked lamb shanks with lemon and
almond. |

Serves: 4
Preparation Time: 10 minutes
Cooking Time: 2 hour s |

Ingredients |
|

lamb shanks |
|
1 tbsp |
|
olive oil |
|
1
|
|
onion,
finely chopped |
|
3 tsp |
|
crushed
garlic |
|
1 tsp |
|
ground
turmeric |
|
1 cup |
|
sweet
vermouth |
|
1 cup |
|
vegetable
stock |
|
4
|
|
fresh or 2
dried bay leaves |
|
1/4 cup |
|
almond meal
(30g) |
|
|
|
Grated zest
and juice of 2 lemons |
|

Method |
|
1. |
|
Heat a
little of the oil in a deep-sided pan on high and brown
lamb in small batches, removing each batch before adding
the next. |
|
2. |
|
Heat a
little more oil on high. Fry onion, garlic and turmeric
for 1-2 minutes. |
|
3. |
|
Stir in
remaining ingredients then return lamb drumsticks. Reduce
heat to low, cover and simmer (cooking gently at a level
where tiny bubbles rise to the surface) until fork tender,
about 1 1/2 - 2 hours. Stir occasionally. |
|
4. |
|
If
consistency needs thickening, simmer with lid off until
reduced (about 15-20 minutes). |
|
5. |
|
Garnish with
sliced black olives and chopped parsley and serve with
rice and seasonal vegetables. |
|

Tip: |
|
As an alternative garnish with toasted slivered almonds and
serve on couscous mixed with chopped preserved lemon and a
handful of finely chopped parsley. |

2002 Semillon Margaret River - Not a Semillon fan I hear you
say? Too bad; track this one down, you won't be disappointed.
Already creamy, with a honeyed citrus, almost nutty character.

Schild Estate Shiraz 2004 - Pretty much liquid vanilla
chocolate. Found it at Purvis Wine Cellars, (02 9888 6644)
for $14.95, which is a steal. Normally $20, but even at $30 this
would still be a good value wine. Search high and low for it,
because even their website will only sell you one bottle.
