ENGAGED!
Well, as many of you know, it finally happened - I proposed to Nicole!
It was a glorious day at Flemington, and with 4 bottles of Veuve ready to go, I got down on one knee...and completely forgot the little speech I had been rehearsing in my head over the last few days. Lucky I was holding out a felt box with a ring in it, so she has a fair idea of what was going on.

Friends & family were on hand to help us drink the French bubbles (and the good Tasmanian Janz), so was an awesome day. Special thanks to Nicole Gilbert, with whom without a "yes" wouldn't have made the day anywhere near as fun.


 

Melbourne Cup Lunch
Hollicks and WANT, the new clothing store in Penola turned it on for a ladies day over looking the vines, with fashion parades, and lots of bubbles. So I've been told. Photos from Nicole Gilbert, and found on my camera (mwaa ha ha!).

U2 at Footy park
Just 60,000 of Bonos' closest friends turned out for the event of the year (after our engagement of course). Thousands got a text from him after sending their name to the number on the big screen.

23 million helped Bono take part in www.makepovertyhistory.com.au , breaking the world record for the "largest single-coordinated movement of people in the history of the Guinness World Records."

For the foodies: Christmas
Roast Duck with roasted beetroot and raspberry vinaigrette
The natural sweetness of the beetroot and raspberry vinegar in this dish go great with crispy roast duck

INGREDIENTS
2 Pkts Roast half Duck
8 Baby Beetroots
2 tbls Country Cuisine Raspberry Vinaigrette
4 cups Mixed salad
1 Tub cherry tomatoes

METHOD

Trim the leaves off the top of the beetroot, rinse the beetroot in cold water and place in a large saucepan and cover with cold water.

Bring to the boil turn down to simmer and cook till tender about 30 to 40 mins.

When cooked cool under cold running water while removing the skins with your hands and leave to drain.

Cut the beetroots into 1/4s and heat a suitable oven dish, add the olive oil and when hot toss in the beetroot toss till all sides are coated in the oil and place in a hot oven for 15 - 20 mins.

When the beetroot is cooked remove from the oven toss with the salad dressing and serve on top of the Salad leaves

Serve the hot roast duck to the side.
