Frosts, frosts and more frosts - and this time they were serious, as the growing season has started. Low crop in '06, and now '07 (and '08, because there aren't any bud for the following year, will mean your Coonawarra wines will become a bit short on the ground, so start stocking up...



 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Agri-links Ball was put on by a young group of up-and-comers as a networking exercise, and raising money for mental health here in the Limestone Coast. Awesome time was had by all, and a crap load of money raised - nice work.

The Melbourne Cup came to penola with a whole heap of fanfare for the national icon, complete with white gloves and burly security guards named Biff...or something.

Hot Food Tip:
To keep potatoes or pasta from foaming over when boiling, add a spoonful of oil.

FRESH SALMON FRITTER ON SUGAR CANE STICK

  • 1 Kg (10 Serves) or 30 fritters @34grms

    INGREDIENTS
  • SALMON FRITTER
  • 1kg Fresh Salmon Fillets
  • 6 Egg whites
  • 8 Kaffir Lime Leaves
  • 1 Red Chilli
  • 4 Tbsp Fish Sauce
  • 2 Tbsp Coriander
  • Bellata Gold Saffron Linguine

    SAUCE
  • 90g Coriander (stalks and leaves)
  • 30g Mint (leaves)
  • 4 Roasted garlic cloves
  • 2Tbsp Fennel and coriander seed
  • 2tsp Fish sauce
  • 1tsp Sugar
  • 1tsp Sesame Oil
  • 75mls Lemon Juice
  • 2 Green Chillies
  • 100mls Olive Oil
  • 5 Kaffir Lime leaves

    INSTRUCTIONS
  • Preparation time 30 minutes
  • Skin, trim, de-bone and finely slice fish fillets.
  • Add the egg white, lime leaves, chilli and fish sauce and blend until smooth.
  • Remove and add coriander and mix. Mould onto sugar cane and refrigerate.
  • Deep fry when required.

    Sauce
  • Blend all ingredients to a smooth paste using a blender.
  • To serve place saffron stack onto plate (cook as per instructions on packet), garnish with coriander
  • and mint pasta and top with salmon fritter.

Angel's Footsteps Sauvignon Blanc $19
- New Savy from us - awesome year for it in the next door Mt Gambier region. Must have been good, because Fosters slipped in there the other week and snapped up all Pinot and Sav Blanc vineyards to contract. Nice Tomato leaf and Pink grapefruit zest.

Redden Bridge 2003 Gully Shiraz $24
Yep, cracker. Just to the north of Coonawarra lies Wrattonbully, and when not
hit by frosts, produce some super-smooth Shiraz - this one of notable exception. Chewy dried blackcurrants with velvet tannins. Good luck finding it.
