Coonawarra wine and food came together the other day for a culinary extravaganza - which was sold out in less than a day. Chefs from Pipers of Penola, Upstairs at Hollick, and the Poplars Kitchen each created a course, supported by the finest of Coonawarra Reds & Whites.

Word of the day:
An increased ability to smell is called hyperosmia. For example, being able to identify the perfume that a person wore who sat in the chair before. Hyperosmia is seen in patients with cluster headaches, migraines and adrenal cortical insufficiency.

Is that so...
"Taste" or "Flavour" is defined as a combination of true taste, consistency, viscosity and smell. Approximately 90 percent of taste is smell. This is easily demonstrated by holding your nose and eating a chocolate bar. The taste of the chocolate will be similar to chalk. This demonstrates the phenomenon called olfactory synesthesia syndrome when you misperceive one sense as demonstrated by placing gentle pressure directly to your eyelids with eyes closed. You begin to see light spots before your eyes. These spots are actually caused by the pressure misperceived as light.

Cooking with MacGyver
Hot rock cooking
Simply light a fire above a bed of non-porous rocks. Don't use soft, porous stones with high moisture content, as they might explode on heating.


Let the fire burn for half an hour or more. Meanwhile, prepare your food. Brush away fire and embers with a handful of long grass.

Cook food directly on the hot rocks. Use it in the same fashion as you would a frying pan. Ideal for fish, thin meat slices and frying eggs.

Mild mussaman beef curry
Serves: 4
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Ingredients
500 g Round steak, slice it across the grain into thin strips.
1 tbsp oil
1/3 cup mussaman curry paste
400 ml can coconut milk
1/2 cup beef stock
2 tsp brown sugar
2 large potatoes peeled and cubed.
2 tsp fish sauce
a small handful of fresh basil leaves

Method

1. Trim round steak, slice it across the grain into thin strips. Drizzle beef strip with a little oil. 2. Heat a wok, ensure it is hot. Stir-fry the beef in two batches, reserving each batch. Add oil to the wok, reduce heat and then add mussaman curry paste. Stir for 2 minutes. 3. Add coconut milk, beef stock and brown sugar. Raise the heat to bring the mixture to the boil. Stir for 1 minute, reduce heat and add potatoes. Stir for 5 minutes, stir occasionally. 4. Return beef to wok, stir and simmer for 5 minutes more. Do not let the mixture boil. Stir in fish sauce and basil leaves.

Serving Suggestion: Serve sprinkled with roasted pine nuts and extra coriander.

I swear I spoil you - this is my secret weapon for dinner parties  this one has a relaxed up-tempo feel - definitely for a Saturday night dinner party with good friends.
