Rain - about time, dang naggit.
Finally after the worst drought in Coonawarra's history, Winter is well on its way, with enough rain to fill in those cracks that were big enough to lose a crowbar down. Plenty of farmers down here have been thinking they're Gene Kelly, kicking their heels up in puddles...

Wine tips: No decanter?
Got yourself a reasonably expensive 2004 or 5? - pour yourself a glass, put the lid/cork back on, and lay it on it's side in a safe place so it doesn't roll off the table. Leave it for a half an hour or more - you'll be surprised how much that extra surface area allows the wine to open up to be richer & smoother. Don't have half an hour? Give it a very gentle shake to get the air in. Not too much, as you can bruise the wine.

After Dark Harvest Festival
I wouldn't lie to you - the most successful After Dark yet. All wineries hosting events mentioned how successful it was, so get you accommodation booked early, as most places were booked out this year. Lucky the weather was good, as we had about 20 people spilling out onto the street. We need a bigger cellar door...

Cooking with MacGyver
Last time it was how to cook breakfast in a hotel room with just an iron and a kettle, this time the winning entry is:

The Old Holden 253 BBQ
Have a great tip for cooking meat when stuck in the bush with no fire. Also works well if travelling –

Wrap meat in foil and place on top of the engine block of your car (works particularly well on the valley cover of an old Holden 253). Drive down the road about 20 km’s at a speed conducive to road conditions and the type of meal being prepared. Stop and unwrap meat to let out steam, and fat (again dependant on meal being prepared). Wrap meat and place other side down on the engine. Drive for a further 20 km’s and meat should be cooked medium.
Note – drive time should alter according to size/cut of meat being prepared. Sausages take a few more km’s. Opening foil not recommended unless you like a bit of dirt and grit (fibre) on your meal.

Spice-crusted Tuna with Thai Citrus Dressing
(Serves 4)


Well, I had to go out there and catch this one myself - don't say I don't do anything for you.
It was the roughest weather I'd ever been out in, and let me tell you, eating tuna was the last thing I felt like after 7 hours on the high sea.

Ingredients

Four 7oz (200g) tuna fillets, 1in (2.5cm) thick

1 tbsp peanut oil
2 tbsp coriander seeds
2 tbsp black peppercorns
Lime wedges
For dressing
2 lemon grass stalks
1 fresh red chilli, seeded and finely sliced
1 tbsp finely chopped cilantro
2 tbsp fish sauce
2 tbsp peanut oil
1/3 cup (90ml) fresh lime juice


Essential equipment

Hinged wire rack, or alternatively a long metal spatula for turning fish on the grill

Method:

For dressing, remove and discard the tough outer skin from the lemon grass stalks and finely slice. Combine lemon grass, chile, cilantro, fish sauce, oil and lime juice. Brush tuna fillets on both sides with oil. Crush the coriander seeds and peppercorns, either with a pestle and mortar, or by placing them in a plastic zip-lock bag and crush with a rolling pin. Press crushed seeds onto both sides of fillets. Grill according to instructions below. Pour over dressing and serve hot or at room temperature with lime.
Outdoor on the barbecue:
Grill over hot coals, 2 minutes per sides for rare, 3 minutes per side for medium rare, 4 minutes per side for well done.
Indoor:
Preheat a ridged cast iron grill pan over high heat. Cook for 2 minutes per sides for rare, 3 minutes per side for medium rare, 4 minutes per side for well done.
Think ahead
Coat tuna with spices up to 4 hours in advance. Cover and refrigerate. Make dressing up to 3 hours in advance. Cover and refrigerate.

Sia is a crazy chick from Adelaide who has a voice like a melted Toblerone - smooth, with crunchy bits. Definitely red wine music.
