Ambriel's Gift Vineyard, Fruitful Flowers
Fruitful start to the season
This year is shaping up to be another cracker (touch wood). It looks like a great year for those of us who are chemical free;
Clover is growing out of control, giving us great natural nitrogen for the vines and Dandelions are everywhere,
creating a food source for our tiny predatory wasps which feed on vineyard pests (more on that next month).

It took a while for it to settle down, but our Pinot Noir is looking as elegant as the 2008. Hence Gold like the 2008.

Dishwasher steamed salmon

Ingredients:
• Two smallish fillets of salmon
• Olive oil, salt, pepper & Lime

Step 1: Put both salmon fillets on a coated piece of aluminium and season with lime, salt and pepper.

Step 2: Put another coated sheet of foil, on top of the fillets rolling sides in tightly. Make sure your foil doesn’t tear or your dishwasher will smell like fish
for at
least a week.

Step 3: Stick the double-wrapped foil packet on the top shelf of your dishwasher. (You can also stick dishes in there if you want.) Turn on the dishwasher, both a wash and a dry cycle. Disable the Energy Star power saver mode (it won’t get hot enough), use regular cycle.

Once the cycle finishes, ala "steamed fish" or "Sushimi" or "cat food" depending on the heat of your dishwasher.

Ingredients
500 g lamb strips
2 tbsp oil
1 small onion, cut into thin wedges
3 cloves garlic, crushed
1 small chilli, finely chopped
1 bunch brocollini, cut into even sized pieces and cut again horizontally
2 tbsp water or beef stock
1 tbsp soy sauce
¼ cup Kecap Manis sauce
steamed rice to serve

Method
1. Combine the lamb strips with half of the oil.
2. Heat the wok, ensure it is hot. Stir-fry the lamb strips in 3 batches, reserving each
cooked batch to rest in a warm bowl. Reheat wok between each batch.
3. Reheat the wok, add remaining oil and heat. Add onion, garlic and chilli and stir-fry for 1-2 minutes. Add the brocollini and water and stir-fry for 2-3 minutes.
4. Return the lamb to the wok, add the soy and Kecap Manis, toss to combine.
Serve immediately.
Serving suggestion: Serve with steamed rice
