Tempting Wines, Tapas and Tunes
The annual Coonawarra Cellar Dwellars month brought out some fine tasting museum stock with events held throughout
the month of July. Koonara celebrated with two Cellar Door events with the Tempting Wines range on tasting
and diVine Cafe cooking Spanish doughnuts with Chocolate dipping sauce one night, then spicy chorizo and
squid curry
the next...

We are only too happy to donate to worthy causes and this is surely one of those, the not-for profit charity
raised $85,000 that is 100% donated towards a permanent home for the sunrise children's Orphanage in Kathmandu, Nepal along
with training and development centres and schools for the Sunrise children and surrounding communities.

Cooking with MacGuyver - How to carve a beef roast

1. For the juiciest roast, allow the beef to rest for 20 minutes before carving. This allows the meat juices to redistribute (which keeps the beef juicy) and makes carving easier.
2. Steady the beef with a carving fork and begin slicing (not sawing) the roast (use the full length of the blade).
3.
Carve across the grain of the beef at a consistent angle. Gently remove any strings or skewers as you carve.
4. Transfer the beef roast slices to a warm serving platter and spoon any juices
over the top
.

Coonawarra Cabernet Sauvignon 2007
A wine named after a true quiet achiever in Coonawarra, who unfortunately passed away
some years ago. His son Sam
(a Rally Car champion) has put out
this wine in his honour. And a very
fitting wine indeed: a
deeply
complex Cabernet with brambly
notes, mocha and dark chocolate.
I’m sure he’d approve.

Dinner tonight - Barbecued Cumin Rubbed Beef with Tabouli
Serves 4Cumin rubbed beef with Tabouli
Prep: 20 mins
Cooking: 8 Minutes

Ingredients
4 x 200g rump steaks
2 tsp cumin seeds
2 tsp coriander seeds
1 tbsp oil
small tub baba ganoush or hummus and pita bread to serve
Tabouli
1 punnet cherry tomatoes, halved
2 tbsp cracked wheat, soaked in 2 tbsp water
1 large bunch flat leaf parsley
1 bunch mint
4 spring onions, finely chopped
1 Lebanese cucumber, finely diced
¼ tsp cracked black pepper
juice of one lemon
2 tbsp extra virgin olive oil

Method
1. Brush the steaks lightly with oil. Season with salt. Combine cumin and coriander seeds and toast in a small dry frypan until seeds are fragrant. Remove from pan and grind/crush into a powder. Rub ground spices on the steaks. Preheat the barbecue flat-plate or char-grill plate to hot before adding the steaks.
2. Cook on one side until the first sign of moisture appears. Turn steaks once only. Test the steaks for degree of doneness with tongs. Rare is soft, medium feels springy and well done is very firm.
3. Remove steaks from heat, loosely cover with foil and rest steaks for 5 minutes before serving. To serve cut the steaks into slices and serve with the tabouli.
4. To make Tabouli: Preheat the oven to 200ºC. Place the halved tomatoes on a baking tray lined with baking paper and bake in the oven for 15 minutes or until soft. Place in a bowl and add the cracked wheat. Finely chop the parsley and mint and add to the bowl along with the onions, cucumber and pepper. Toss through the lemon juice and oil and season to taste.
Serving suggestion: Accompany with dollops of baba ganoush or hummus, and pita bread.
