Small clusters of flowers have emerged, our vineyards are hermaphroditic meaning they can self pollinate, we should start to see grape set.... Soon. Organic in conversion  Shortly the Trichogramma wasp also known as a "stingless wasp" will be introduced into our vineyard. This tiny insect has been shown to control over 28 species of insect pests and will help us eliminate the need to spray. The female wasp injects its own eggs into the eggs of the pests with their Larvae consuming the contents of the pest eggs. Dinner tonight -
Roasted beef
rib eye seasoned with Italian herbs
- perfect for Christmas Lunch! Serves 6 Prep: 15 mins Cooking: 75 Minutes  |

Ingredients 1½ kg piece rib eye/scotch fillet2 tbsp Italian dried herb mix (or your favourite herb mix, or chopped dried rosemary)
Method 1. Preheat oven to 200ºC. If you have time, tie the beef with individual pieces of string at 5cm intervals (you can also get your butcher to do this). Brush the beef roast lightly with oil and sear it on all sides over a moderately-high heat until evenly browned. 2. Season the beef with pepper and salt and rub the herb mix over it. 3. Place the beef on a rack in a roasting dish. Add a little water to the roasting dish (about ½ cup). Roast for 60 minutes for rare, 75 minutes for medium and 90 minutes for well done. For ease and accuracy use a meat thermometer. 4. Remove the beef roast, cover loosely with foil and rest it for 20 minutes before carving. |
