The Story Behind The Name

We named our Pinot Gris after our two beautiful girls, Lucy and Alice. Simple as that.

But every wine deserves a great backstory, right? Our Lucy and Alice Pinot Gris holds a particularly heartwarming tale. Named after our lovely daughters, this wine encapsulates the joy and excitement of family life.

When our second daughter, Alice, was born, we were in the process of bottling this new Pinot Gris. The decision to name the wine after Lucy and Alice was a delightful surprise for Nicole—she had no idea until I showed her the bottle in our Cellar Door.

There weren’t many dry eyes that day! Knowing how it came to be, you could say this wine is as special to us as the girls it was named after.

Pinot Gris or Pinot Grigio: Know the Difference

Ever found yourself puzzled over the terms Pinot Gris and Pinot Grigio? Both refer to the same grape variety, but that’s where the similarities end.

The Italian style, Pinot Grigio, is harvested earlier, lending a crisper, more acidic finish. Meanwhile, Pinot Gris—the French counterpart—is picked later, offering a sweeter, more floral profile.

Given that Lucy and Alice are as sweet as they come, it’s no wonder our tribute to them is a Pinot Gris.

The fresh, zesty notes of our Pinot Gris complement the tropical sweetness of mango and the savoury crunch of tofu. Toss in some wombok, red cabbage, and a peanut dressing, and you’ve got a quick and easy dish for a weeknight dinner but still fancy enough to impress guests.

While this recipe is vegan-friendly, the tofu can easily be swapped for prawns or chicken, giving you endless options. Paired with this wine, the recipe tastes like what sunshine would feel like. It’s that good!

Mango Tofu Salad

Prep Time 15 minutes
Cook Time 10 minutes

Servings 4 people

Ingredients
  

  • 500 g tofu
  • Salad
  • 50 g wombok
  • 150 g red cabbage
  • 100 g beansprouts
  • 20 g chopped peanuts
  • 1 handful coriander
  • 1 handful mint
  • 1 red chilli
  • 25 g dried coconut
  • 2 spring onions
  • 2 mangoes
  • Dressing
  • 1 heaped tbsp smooth peanut butter
  • 1 tsp lime juice
  • 1 tsp soy sauce
  • 3 tbsp olive oil
  • 1 tsp rice vinegar
  • 50 ml water

Instructions
 

  • To prepare the dressing, blend all the ingredients together (except water) Then Gradually add water to thin it out
  • To prepare the salad begin by thinly slicing all the vegetables. Then peel and slice the mango thinly.
  • In a dry pan, Toast the coconut for approx. 2mins
  • To prepare the tofu, Cut it into 2cm cubes and skewer them, Drizzle with oil and cook for 8mins on the BBQ/grill – turning every 2mins until charred
  • Add all salad ingredients and coconut together and toss to combine, ready to serve
  • To Serve: Placetossed salad in bowl, top with tofu skewers and pour on peanut dressing.

Notes

  • Don’t toss the salad until the tofu has been cooked, as it will wilt quickly
  • You can add any spices or seasoning you want to spice up your tofu
  • Try using mangoes that are a little firmer for this recipe
  • Coconut will burn very quickly when toasting, so keep an eye on it
  • This dish is also great with prawns or chicken instead of tofu.
