Vegan Avacado Pasta with Sauv Blanc

Simple Avocado Pasta

This scrumptious avocado pasta is a culinary gem you'll want to have at your fingertips. It's the perfect blend of creamy indulgence and wholesome greens, offering a guilt-free pleasure that's brimming with taste. Quick to whip up and a hit with all who try it, this dish is the epitome of a dinner-time victory.

Ingredients
  

  • 1 Avocado
  • 100 g Spinach
  • 2 cloves Garlic
  • 2 tbsp Lemon Juice
  • 150 mls Coconut Cream
  • 350 -400 g Pasta
  • 300 g Cherry Tomatoes
  • Oil
  • 25 g Pinenuts
  • Salt

Instructions
 

  • Toast pinenuts in a dry pan and set aside
  • Make sauce by blending all theingredients together in a food processor (not the cherry tomatoes or pinenuts)
  • Cook the pasta
  • While the pasta is boiling cut the tomatoes in 1/2 or 1/4's depending on their size and then fry off in olive oil.
  • Add avocado sauce to the pan and simmer on low heat
  • Pour cooked pasta and some of the starchy pasta water into the tomato pan
  • Mix together and serve with pinenuts.

Notes

  • The avocado sauce will discolour after a while, so its best to make it fresh/ or an hour or so serving
  • ALWAYS add some of the pasta water to your sauce, as the starch helps bind the sauce to the pasta.
  • This tastes equally delicious cold, so leftovers are always good.
  • Add some chilli flakes to the tomatoes when cooking or green chilli to the sauce for a little extra spice!
