Most people find a wine glass they like well enough and move on. Dru is not most people.

When he couldn’t find a wine glass that he could really enjoy drinking from, he did what he always does: started asking why. Why does the rim have to be that thick? Why can’t it fit in a dishwasher? Why does sparkling wine foam over every single time? And once he’d worked out the why, he got to work and designed them himself.

It’s how many things at Koonara have come to be. The vineyard management practices. The winemaking decisions. And eventually, an entire glassware range. Dru is nothing if not consistent.

The result is the Savor wine glass range: five glasses, each one built around a specific problem that had been bugging him for way longer than he’ll ever admit.

The one that started it all: The Savor Wine Glasses

Every wine glass Dru tried had at least one flaw that detracted from the fine wine-drinking experience. Too fragile for the dishwasher. Wrong pour size. The rim is so thick that it gets in the way of actually tasting the wine, and it’s not the right shape and size to allow the wine to shine. Sometimes all four at once.

So he drew up a brief for his ideal everyday wine glass. Big enough to let the wine breathe properly, but still fits in a standard dishwasher. A cold-cut polished rim that’s fine enough to drink from comfortably, but five times stronger than standard glass. And here’s the detail that sounds small until you think about it: the widest point of the bowl sits at exactly the standard drink marker. Pour to the curve and you’ve got a standard drink, every time. No guessing, no measuring, no mental arithmetic. A bottle gives you exactly five glasses and you’ll know it.

It’s the kind of thing that makes venue operators very happy (compliance without the effort), but it’s equally useful at home if you’re keeping an eye on what you’re drinking without wanting to make a production of it.

Suitable for red, white, and rosé: one glass handles all of it. Because really, who wants to bother with a different glass for every varietal.?

The one for people who love bubbles: The Savor Sparkling Glass

This one came from two specific frustrations.

First: have you ever tried polishing a traditional champagne flute? Your hand barely fits inside. The cloth goes in at an angle. Nothing actually gets clean. You end up waving it vaguely in the direction of some steam and hoping for the best.

Second: pour sparkling wine into a traditional flute too enthusiastically and watch it foam straight over the rim and down the side of the bottle onto your bench. Every. Single. Time.

Dru designed the Savor Sparkling Wine Glasses with a wider opening, wide enough to actually reach inside and polish properly, and an anti-spillage shape that reduces the foaming problem. Same potassium salt coating as the rest of the range, so five times stronger than standard. Same cold-cut rim. And like the wine glass, the widest point sits at exactly the standard drink marker. Pour to the curve and you’re pouring a standard drink. Venues love this for obvious reasons. At home it’s just a quietly useful feature that doesn’t go unnoticed.

Two problems here. One: why is it so hard to find a stemless glass that works as well for whiskey as it does for wine? Two: why do they all tip over so easily?

Dru wanted a stemless glass versatile enough for his evening whiskey and his dinner wine, stable enough not to go over every time someone gestured too enthusiastically at the table, and practical enough for everyday use. The Savor Stemless has a self-righting base. Knock it and it bounces back upright rather than going over. You can also lay it on its side to aerate whiskey, which is something whiskey enthusiasts will appreciate more than they expected.

One small note worth knowing: without a stem, your hand warms the wine slightly faster. For whites, pour them a touch cooler than you normally would. For reds and whiskey, that gentle warmth is doing you a favour.

The newest addition: The Savor Smartini

James Bond made drinking from a martini glass look effortlessly cool. The reality is that traditional cocktail glasses are pretty much designed to spill. The wide, shallow shape means your drink is permanently threatening to go over the edge, and the rim tends to drip when you sip.

After what we’ll diplomatically call extensive research (read: a lot of martinis), Dru decided cocktail lovers deserved better and added the Smartini to the range.

These are the glasses we use at every Koonara event: the Summer Fiesta, our pop-up tastings, the Platinum Marquee racing days. If you’ve been to one and thought the wine glasses felt surprisingly good for outdoor use, now you know.
