What Australia does best! Aged in French oak barrels for 2 years, this is a elegant cool climate Shiraz, that will age well until 2025. Our aim is to make a complex sparkling Shiraz. Cool climate Shiraz works great as a sparkling, as the mint notes make it refreshing on hot days when you feel like a steak. The oak ages has given some nice Christmas cake complexity, but still with fresh blackcurrants and licorice.

The grapes for this cool-climate Chardonnay are grown in Mount Gambier, the coolest mean maximum temperature average of any wine region in mainland Australia. 50% of the wine was matured in new French oak Hogshead barrels for 4 months, which brough on a malo-latic ferment (2nd ferment) changing the malo acids into lactic acid the same as in milk and butter giving it a creamy mouth feel. The remaining 50% of the wine was fermented with select year. This single ferment keeps the crisp lime, pink lady apple and mineral notes. This is 'left on lees' (the dead yeast after ferment) and is stirred to increase flavours and complexity.

Critics Review: Award winning Coonawarra Cabernet Our The Head Honcho, Coonawarra Cab 2012 vintage was awarded: • 95 points, James Halliday “Even more concentrated and focused than the Family Reserve Ambriel’s Gift, with more blackcurrant fruit and more tannins.” • 4.5 Stars, Winestate Magazine “Intense black fruit aromas with a sweet oak lift. The palate is dark and closed at the moment with very pure varietal fruit characters and excellent tannin definition.”

Koonara is the name of our Coonawarra estate whwere our family has lived for over 110 years. When wine is aged in fine oak barrels, a portion evaporates - winemakers call this the 'Angels Share.' From this, the koonara Angel was born. This wine is named after my beautiful wife Nicole, who has piercing blue eyes with hints of yellow, making them look silver. A great example of a cool climate year in Coonawarra with fresh coffee and dark chocolate layered with fresh blackberries and spice. Aged for 18 months in 100% French oak 300L Hogsheads.
